GDC Standard Operating Procedure (SOP): 409.04.27 Food Service Hazard\n\nAnalysis Critical Control Point (HAACP) Plan; and\n\nB. ACA Standards: 5-ACI-5C-12 (ref. 4-4323) and 4-ALDF-4A-14.\n\n**III.** **Definitions:** None.\n\n**IV.** **Statements of Policy and Applicable Procedures:**\n\nA. Meat Processing Plants:\n\n\n1. All GDC meat plant facilities must operate under the inspection and\n\ncertification of the Georgia Department of Agriculture and the United States\nDepartment of Agriculture.\n\n2. All GDC meat processing plants shall provide adequate office space,\n\nfurnishings, light, heat, and janitorial services free of charge to inspection\nemployees.\n\n3.  The following processes must be followed in accordance to meat inspection\n\nregulations:\n\n\na. All meat should be from an approved state or federal inspected plant;\n\nb. All sanitation methods and pesticide/rodent controls should be\n\nmaintained; and\n\nd. All food or color additives added to any processed product should be\n\napproved.\n\nB. Inventory Control:\n\n\n1. Each meat plant facility must maintain an inventory system for accountability\n\nof product that is processed and stored in freezers and/or coolers. The Food\nService Computer Inventory System shall be utilized at all facilities\nconnected to the mainframe.\n\n2. Each meat plant facility must maintain an inventory system for reporting and\n\ndispersion of all inedible meat products. All payments must be in accordance\nto the GDC fiscal management procedures.\n\n3. A system of procurement, control and storage of meat processing supplies\n\nmust be maintained by each plant and must be adequate to meet its tasks.\nThis includes supplies such as boxes, liners, labels, knives, sanitizing agents,\netc.\n\n4. Each meat plant facility must maintain an inventory record keeping system\n\nfor reporting and dispersing all processing supplies and raw materials. A\nFood Service Computer Inventory System shall be utilized at all facilities\nconnected to the Mainframe.\n\n5. Meat Plant Security:\n\n\n\n\n\n\n\n1. All meat plant facilities and perimeters shall conform to security\n\nrequirements dictated by the classification of offenders assigned to work at\nthat location.\n\n2. All staff shall familiarize themselves with the rules and regulations governing\n\nthe security of offenders.\n\n3. All tool and knife control shall be inventoried and monitored to a degree\n\nsufficient to prevent offenders from injuring one another, injuring staff or\nattempting escape.\n\n4. All staff shall familiarize themselves with key and lock control procedures to\n\nmeet the security requirement to supervise offenders.\n\nD. Maintenance and Monitoring of Meat Plant Facilities: Management must\n\nmaintain a system for monitoring coolers and freezers to avoid loss of\ninventoried products. This must include weekends and holidays. Record of\ninspection shall include inspection times, temperatures and reported problems.\n\n\nE. Receiving:\n\n\n1. All meat received is to be recorded on the delivery invoice.\n\n2. Documentation shall be completed showing the product was received and\n\nshall be turned in to the computer operator or to the individual keeping\nrecords for the meat plant.\n\n\nF. Lot Production and Meat Processing Report:\n\n\n1. The Processing Plant Manager or designee will complete the production\n\nAnalysis portion of the report.\n\n3. The Processing Plant Manager or designee will review the entire report for\n\naccuracy and sign it.\n\n4. The report will have two (2) copies to be distributed upon completion to:\n\n\na. Processing Plant Manager; and\n\nb. Administrative Office to enter into the Food Service Computer Inventory\n\nSystem.\n\nG. Beef and Chicken Processing Documentation:\n\n\n1. Meat plant managers will maintain meat product processing ledger sheets or\n\nother records of documentation for inventory accountability and monthly,\nquarterly and annual reporting of statistical meat processing data for all items\nof meat processed or discarded.\n\n2. This information is taken from each lot production report when it is\n\ncompleted and shall be used for monthly reporting.\n\n3. The Beef and Chicken Processing Performance Report will be completed on\n\na monthly and annual basis.
